豆漿發酵實驗

 一般常見以牛乳做優酪乳

這次以豆漿做優酪乳

以 HCl 0.2mL 持續滴定 Na2CO3 的變化

以 HCl 0.2mL 持續滴定 Na2CO3 的變化（加入甲基橙指示劑）

以每次 0.2 mL 的micropipette 持續加入 HCl 

並以 pH meter 監測 pH 變化並記錄

炒過之黑豆花青素萃實驗

 炒過之黑豆花青素萃實驗

以每瓶大約 14 g 稱取黑豆

分別以熱水、95%乙醇及丙酮做測試

加入測試液體後-正面
可以馬上看到加入熱水已呈現紫色
加入 95%乙醇及丙酮的肉眼未看到變化

加入測試液體後-背面

泡製一小時
加入熱水的已經完全呈現黑色
95% 乙醇與丙酮微微的帶淺色
為測試黑豆成深色原因是因為水還是溫度
再加入第四瓶冷水測試

再泡製一小時後的成果
第四瓶冷水出現明顯的紫色
以肉眼來看
熱水效果最好
其次為冷水

備註：阿原老師提醒：肉眼看見的不見得準確，最好的方式是以分光光度計去測量溶出物質，才能確定花青素真正溶解出的量
